  • 1/2 tsp. fine sea salt, or to taste
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Prepare the Vinaigrette: In a small bowl, combine all the vinaigrette ingredients: olive oil, balsamic vinegar, white wine (or broth), finely chopped fresh parsley, and salt. Whisk vigorously until all ingredients are thoroughly blended and emulsified. Set aside.
  2. Cook the Pasta: Bring a large pot of generously-salted water to a rolling boil. Add your chosen pasta and cook according to package instructions until it reaches an al dente consistency (it should be firm to the bite, with just a slight chew). Immediately drain the pasta well and set aside.
  3. Sauté the Aromatics and Vegetables: Heat 2 teaspoons of olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about one minute until fragrant, being careful not to burn it. Next, add the diced roma tomatoes, diced red onion, the cooked pasta, and your prepared protein (shrimp, meat, etc.). Continue to sauté and stir frequently for about 5 minutes, allowing the pasta to lightly brown and the flavors to meld beautifully.   4. Add Spinach and Vinaigrette: Once the pasta and vegetables have slightly browned and cooked down, add the fresh baby spinach to the skillet.
