Ingredients

Satay Sauce Ingredients:

  • 1 (15-ounce) can chickpeas (drained, liquid reserved)
  • 3 tablespoons coconut milk
  • 1 tablespoon avocado oil (or coconut oil)
  • 1 tablespoon creamy natural peanut butter
  • 1 tablespoon red curry paste
  • 1 teaspoon mustard
  • 1/4 teaspoon ground ginger
  • 2 cloves garlic
  • Dash of lime juice
  • Pinch of Kosher salt and freshly-ground black pepper, to taste

Noodle Bowl Ingredients:

  • 2 small zucchinis
  • 1 teaspoon olive oil
  • 1 teaspoon tamari or soy sauce
  • Toppings: chopped fresh cilantro, chopped nuts (like cashews or peanuts), crushed red pepper flakes, lime wedges, sriracha (optional)

Instructions

To Make The Sauce:

  1. Combine all sauce ingredients in a food processor or blender. Puree until completely smooth, stopping to scrape down the sides once or twice if needed. For a thinner sauce consistency, you may add an extra tablespoon or two of coconut milk or water. Taste the sauce and adjust seasonings with additional salt, pepper, or curry paste as desired. Set aside.

To Make The Bowls:

  1. Prepare the zucchini: spiralize, julienne, or shave the zucchini into thin strips using a vegetable peeler. Gently press the zucchini noodles with a paper towel to remove any excess water.
  2. Heat 1 teaspoon of olive oil in a large skillet or wok over medium-high heat. Add the prepared zucchini noodles and drizzle evenly with tamari (or soy sauce). Sauté for 2 to 3 minutes, tossing occasionally, until they are tender-crisp but not mushy.
  3. Remove the skillet from heat. Add the prepared satay sauce to the zucchini noodles and toss gently until all the noodles are thoroughly coated.
  4. Serve immediately in bowls. Garnish generously with your desired toppings, such as fresh cilantro, chopped nuts, a squeeze of fresh lime juice, and a sprinkle of crushed red pepper flakes or a drizzle of sriracha for extra heat.

Notes

The delicious satay sauce can be made ahead of time and stored in a sealed container in the refrigerator for up to 5 days. This makes it a perfect component for convenient meal-prep throughout the week!
