On the menu, nestled among familiar favorites, was a new item: verde shrimp enchiladas. As a devoted fan of Mexican shrimp dishes, my curiosity was immediately piqued. But what truly captivated my attention was the promise of a filling rich with fresh cabbage, vibrant carrots, and tender spinach – a delightful twist on traditional enchiladas. And, of course, the mention of a creamy, zesty jalapeño sauce sealed the deal.

From the very first bite, these enchiladas were nothing short of spectacular. They truly “rocked,” as one might say. Despite being engrossed in a professional discussion, my mind kept drifting back to the explosive flavors on my plate. The combination of succulent shrimp, crisp vegetables, and that extraordinary sauce was so insanely delicious that I found myself planning to recreate them at home before the meeting was even over.

Finally, this past weekend, I brought that culinary dream to life. The enchiladas themselves came together surprisingly easily, thanks in part to a clever shortcut using a pre-made coleslaw mix. However, the undisputed star of the show, the true game-changer, was the jalapeño cream sauce. It was simply ridiculous – in the best possible way. Ingredients

Enchilada Ingredients:

  • 1 lb. peeled, deveined shrimp
  • 2 cloves garlic, peeled and minced
  • Half a white onion, peeled and finely chopped
  • 3 cups coleslaw mix (a convenient shortcut for cabbage and carrots)
  • 3 cups fresh baby spinach
  • 1 tsp. chipotle powder
  • 1/4 tsp. dried oregano
  • Dash of cayenne pepper (adjust to your preferred spice level)
  • 12 (6-inch) corn tortillas (**see note below for warming instructions and/or substitutions)
  • 2-3 cups Monterrey Jack cheese, shredded (or your favorite melting cheese)

Jalapeño Cream Sauce Ingredients:

  • 2 Tbsp. unsalted butter
  • 2 Tbsp. all-purpose flour
  • 1 1/2 cups chicken broth (low sodium recommended)
  • 1 fresh jalapeño, seeded and minced (remove seeds for less heat, leave some for more)
  • 3/4 cup sour cream (full-fat for best creaminess)
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1/2 cup chopped fresh cilantro, plus extra for garnish

Instructions

To Make The Enchiladas:

  1. Prepare Baking Dish and Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Cook the Shrimp: In a large sauté pan, melt 1 tablespoon of butter over medium-high heat until shimmering. Add the peeled and deveined shrimp to the hot pan in a single, even layer. Allow them to cook undisturbed for about 1 minute. While the shrimp are cooking, sprinkle 1/2 teaspoon of chipotle powder evenly over them. Flip the shrimp and continue to cook for another 30-60 seconds, or until they are just pink and opaque throughout. Be careful not to overcook, as shrimp can become rubbery. Remove the cooked shrimp to a plate using a slotted spoon and set aside. Once cool enough to handle, roughly chop the shrimp into bite-sized pieces if desired, or leave them whole for a chunkier texture.
  3. Sauté Vegetables for Filling: Melt the remaining 1 tablespoon of butter in the same pan. Add the minced garlic and finely chopped white onion. Sauté for about 5 minutes, or until the onions are tender and translucent. Next, add the coleslaw mix (which typically contains shredded cabbage and carrots) and the fresh baby spinach to the pan. Sprinkle in the remaining 1/2 teaspoon of chipotle powder, dried oregano, salt, pepper, and cayenne pepper. Stir everything well to combine, and cook for an additional 1-2 minutes, just until the spinach begins to wilt and the vegetables are tender-crisp. Return the chopped shrimp to the pan, stir to incorporate with the vegetables, then remove the pan from the heat and set aside.
  4. Prepare Tortillas and Sauce: While your filling is ready, steam the corn tortillas to make them pliable. This can be done using a tortilla warmer, or by placing them between two damp paper towels and microwaving for 10-15 seconds. Keep the tortillas warm and covered to prevent them from drying out. Simultaneously, prepare the exquisite Jalapeño Cream Sauce as detailed in step 8 below.
  5. Assemble the Enchiladas: Working quickly to prevent the tortillas from drying, place a steamed tortilla on a clean, flat surface. Spoon about 1/3 cup of the shrimp and vegetable filling down the center of the tortilla. Sprinkle a generous pinch of shredded Monterrey Jack cheese over the filling. Carefully roll the tortilla up, snugly enclosing the filling, and place it seam-side down in your prepared baking dish. Repeat this process with the remaining tortillas and filling until the baking dish is full. Once all enchiladas are assembled, drizzle about half of the prepared Jalapeño Cream Sauce evenly over the top. Cover the baking dish tightly with aluminum foil.
  6. Bake and Serve: Bake the covered enchiladas for approximately 20 minutes, or until they are heated through and the cheese inside is melted and bubbly. Remove the dish from the oven. To serve, plate individual enchiladas and drizzle generously with the remainder of the warm Jalapeño Cream Sauce. For an extra touch, garnish with additional fresh cilantro, shredded cheese, or a dollop of sour cream. These enchiladas are best served immediately!
  7. To Make Jalapeño Cream Sauce: This sauce is the star – don’t skip it!
  8. Prepare the Sauce: In a medium skillet or saucepan, melt 2 tablespoons of butter over medium-high heat. Add the 2 tablespoons of flour, whisking continuously to create a smooth roux. Cook the roux for 2-3 minutes, until it turns a light golden color and smells slightly nutty. Slowly whisk in the 1 1/2 cups of chicken broth, ensuring no lumps form. Continue whisking as the mixture thickens. Stir in the 3/4 cup of sour cream, whisking vigorously if needed to achieve a perfectly smooth consistency. Add the minced jalapeño (remember to remove seeds for less heat, or leave some in for a spicier kick). Bring the sauce to a gentle simmer, stirring occasionally, and cook until it thickens to your desired consistency. Remove from heat and stir in the 1/2 cup of fresh cilantro. Season the sauce with 1/2 teaspoon salt and 1/4 teaspoon pepper. Taste and adjust seasonings if necessary.

Notes

Tortilla Tip: Corn tortillas can sometimes be a bit fragile and tricky to roll without cracking, even after steaming. If you’d prefer to skip the steaming fuss or find corn tortillas too challenging, feel free to substitute with soft flour or whole-wheat tortillas. They are generally more pliable and easier to work with, offering a slightly different but equally delicious texture to your enchiladas.

Freezing assembled and unbaked enchiladas is also an option; just be sure to thaw them completely in the refrigerator before baking, and add a few extra minutes to the baking time.
