The Rich History and Evolution of Enchiladas

Our gratitude goes to the vibrant culinary traditions of Mexico for bestowing upon the world the magnificent dish we know as enchiladas. Historians trace the origins of enchiladas back to ancient Aztec civilizations, where the practice of rolling or folding food within corn tortillas is believed to have first taken root. The very word “enchilada” itself is derived from the Spanish verb enchilar, meaning “to season with chili,” a testament to the fundamental role chili plays in this iconic dish.

Over the centuries, and through countless regional interpretations, enchiladas have evolved into a diverse array of varieties, each reflecting the unique ingredients and culinary customs of different parts of Mexico. Their popularity also extended across Latin America, becoming a cherished dish in countries like Costa Rica, Honduras, Nicaragua, and Guatemala. Unsurprisingly, enchiladas have also found immense popularity in the United States, particularly becoming a cornerstone of New Mexican and Tex-Mex cuisines, where they have been adapted to local palates and available ingredients.

This particular chicken enchilada recipe aligns most closely with the beloved Tex-Mex and New Mexican styles. This is evident in its common use of flour tortillas (though corn tortillas are a welcome alternative), a hearty filling featuring mild green chiles and soft shredded cheese, and a flavorful red chile sauce that, in typical Tex-Mex fashion, is often tomato-free. For those eager to explore the roots of this dish and experience a more traditional Mexican-style chicken enchilada, I highly recommend delving into authentic recipes that showcase the incredible diversity of this culinary masterpiece. The world of enchiladas offers an endless array of delicious possibilities!

Crafting the Perfect Chicken Enchiladas: Essential Ingredients

Before we dive into the detailed instructions for assembling these irresistible chicken enchiladas, let’s take a moment to explore the key ingredients that bring this easy and flavorful dish to life. Understanding each component will help you achieve the best possible results and empower you to customize the recipe to your liking.

  • Chicken: For this recipe, I typically opt for boneless, skinless chicken breasts, diced into small, manageable pieces and sautéed to perfection. However, versatility is a hallmark of great recipes. Feel free to save precious prep time by utilizing pre-cooked chicken. Shredded rotisserie chicken offers a fantastic shortcut, as do any leftover diced or shredded baked chicken pieces you might have on hand. The goal is tender, flavorful chicken that readily integrates with the other filling components.
  • Aromatics and Chiles: The foundation of our savory filling begins with a small, diced onion. Whether you choose white, yellow, or red onion, its sweet and pungent notes will perfectly complement the chicken. To infuse an extra layer of authentic Tex-Mex flavor and a gentle warmth, a can of diced green chiles is an absolute must. These mild chiles add depth without overwhelming heat, making the dish accessible to all palates.
  • Beans: To boost the protein content and add a delightful creaminess and earthy flavor to the filling, I consistently incorporate a can of black beans or pinto beans, rinsed and drained. These legumes not only enhance the texture but also make the enchiladas more substantial and satisfying. For those looking to experiment, white beans, lentils, or even chickpeas would also make excellent additions, offering subtle variations in taste and texture.
  • Tortillas: While traditional Mexican enchiladas predominantly feature corn tortillas, I often lean towards flour tortillas for this Tex-Mex iteration due to their superior pliability and ease of rolling. They tend to be less prone to tearing, which simplifies the assembly process. Nevertheless, nearly any style of tortilla can be successfully employed in this recipe. If you prefer the distinct flavor of corn tortillas, just be mindful of the tips provided in the variations section for optimal results.
  • Cheese: The melty, gooey heart of any good enchilada comes from the cheese. My go-to choices include Asadero, Pepper Jack (for a touch of heat), or a readily available Mexican-blend shredded cheese. These cheeses melt beautifully and contribute a rich, savory creaminess. However, the beauty of this recipe lies in its flexibility; feel free to use any type of shredded cheese that you love best – Monterey Jack, cheddar, or a combination would all be delicious.
  • Fresh Toppings: Enchiladas, in my opinion, are always better with a generous assortment of fresh toppings! These vibrant garnishes not only add a burst of color but also introduce contrasting textures and flavors that elevate the entire dish. Consider a medley of freshly chopped cilantro, creamy sliced avocado, finely diced red onion (or for an extra zing, quick pickled red onions), thinly sliced radishes for a crisp bite, fresh or pickled jalapeños for a touch of heat, a dollop of cooling sour cream or Mexican crema, and/or a final sprinkle of extra shredded or crumbled Cotija cheese. Mix and match to create your perfect flavor profile!
  • The Star: Homemade Enchilada Sauce: While you can certainly use your preferred store-bought enchilada sauce for convenience, I cannot stress enough the profound difference that my favorite homemade enchilada sauce makes. It truly is the heart and soul of this dish. This sauce requires only a few additional minutes of preparation and can simmer gently on the stovetop while you assemble the rest of the enchiladas. Made with readily available pantry staples like oil, flour, a thoughtfully selected blend of spices, and chicken stock, its real magic lies in its incredibly rich, complex flavor that is a million times superior to any canned alternative. Thousands of our readers have enthusiastically embraced this homemade sauce over the years, and I wholeheartedly encourage you to give it a try – it’s a game-changer!

Chicken Enchilada Recipe Variations: Customize Your Culinary Creation

One of the most appealing aspects of this chicken enchilada recipe is its incredible versatility. It serves as a fantastic foundation, encouraging you to experiment and customize it to suit your personal preferences, dietary needs, or whatever ingredients you have on hand. Here are some popular variations to inspire your next enchilada adventure:

  • Embrace Corn Tortillas for an Authentic Touch: To lean into a more traditional Mexican-style enchilada, simply swap the flour tortillas for corn tortillas (whether homemade or store-bought). Keep in mind that corn tortillas are generally smaller, so you might need nearly double the quantity to fill your baking dish. You can arrange them in an overlapping pattern or side-by-side as needed. To enhance their toasty corn flavor and, crucially, prevent them from tearing during rolling, I recommend a quick pre-treatment. You can flash-fry each tortilla for about 10 seconds per side in a lightly oiled skillet. Alternatively, a simpler method is to briefly dip each tortilla into the warm enchilada sauce before filling and rolling. This softens them and infuses them with flavor.
  • Explore the Brightness of Green Enchilada Sauce: If you’re a fan of the tangy, herbaceous notes of green chiles, consider making green chicken enchiladas. Simply substitute the red enchilada sauce with my equally simple and delicious homemade green enchilada sauce recipe. This variation introduces a wonderfully savory, brighter chile flavor that creates a completely different, yet equally satisfying, enchilada experience.
  • Experiment with Different Proteins: While chicken is a classic choice, these enchiladas are wonderfully adaptable to other proteins. They would be exceptionally delicious with seasoned ground or shredded beef, succulent shredded pork (especially rich and flavorful carnitas), tender shrimp, or any other protein that captures your fancy. Adjust cooking times for the protein as needed to ensure it’s fully cooked before mixing with the other filling ingredients.
  • Vary Your Beans: As previously mentioned, the choice of beans can subtly alter the flavor and texture of your filling. Beyond black or pinto beans, white beans, hearty lentils, or even chickpeas can be excellent substitutes, each offering its unique profile and contributing to a wholesome and delicious meal.
  • Create Flavorful Vegetarian Enchiladas: Transforming this recipe into a vegetarian delight is simple and rewarding. Omit the chicken entirely and replace it with an abundance of flavorful vegetables such as roasted cauliflower florets, diced zucchini, colorful bell peppers, sautéed mushrooms, or extra beans. You can also incorporate cooked grains like quinoa or rice for added substance. To make these truly vegan, ensure you use a plant-based cheese alternative in addition to a vegetarian filling.
  • Ensure a Gluten-Free Meal: For those following a gluten-free diet, this recipe can be easily adapted. The key is to select gluten-free corn or flour tortillas. Furthermore, when preparing the homemade enchilada sauce, be sure to use a 1-for-1 gluten-free flour blend in place of traditional all-purpose flour to ensure the sauce remains gluten-free without compromising on thickness or flavor. Always check labels on other ingredients like spices and broths to ensure they are also certified gluten-free.

Description

My all-time favorite chicken enchilada recipe! This easy-to-follow recipe yields flavorful, comforting enchiladas perfect for any meal. See notes above for possible ingredient variations and customization ideas to make it your own.

Ingredients

Scale

  • 2 tablespoons avocado oil (or olive oil)
  • 1 small white onion, peeled and diced
  • 1 1/2 pounds boneless skinless chicken breasts, diced into small 1/2-inch pieces
  • 1 (4-ounce) can diced green chiles
  • sea salt and freshly-cracked black pepper, to taste
  • 1 (15-ounce) can black beans, rinsed and drained
  • 8 large flour tortillas
  • 3 cups Mexican-blend shredded cheese
  • 1 batch homemade red enchilada sauce (highly recommended!)
  • optional toppings: fresh cilantro, chopped red onions, diced avocado, sour cream, and/or crumbled cotija cheese

Instructions

  1. Prepare Oven and Sauce. Preheat your oven to 350°F (175°C). While the oven heats, take this time to prepare your homemade red enchilada sauce. It can simmer gently on the stovetop while you proceed with the filling.
  2. Sauté the Flavorful Filling. In a large sauté pan, heat the avocado or olive oil over medium-high heat. Add the diced onion and cook for about 3 minutes, stirring occasionally, until it begins to soften. Next, add the diced chicken and the canned green chiles to the pan. Season generously with sea salt and freshly-cracked black pepper to taste. Continue to sauté the mixture for 6-8 minutes, stirring periodically, until the chicken is fully cooked through and no longer pink. Stir in the rinsed and drained black beans until thoroughly combined and heated through. Remove the pan from the heat and set the filling aside.
  3. Assemble the Enchiladas. To streamline the assembly process, create an efficient “assembly line” on your counter. Arrange your tortillas, a bowl of enchilada sauce, the chicken and bean filling, and the shredded cheese within easy reach. Lay out one tortilla, then spread approximately two tablespoons of the warm enchilada sauce evenly over its surface. Spoon a generous line of the chicken mixture down the center of the tortilla, followed by a sprinkle of about 1/3 cup of shredded cheese. Carefully roll up the tortilla and place it seam-side down into a lightly greased 9 x 13-inch baking dish. Repeat this process with the remaining tortillas, filling, and cheese, arranging them snugly in the baking dish. Finally, pour any leftover enchilada sauce evenly over the tops of the rolled enchiladas and finish with any remaining shredded cheese.
  4. Bake to Golden Perfection. Place the uncovered baking dish into your preheated oven. Bake for approximately 20 minutes, or until the enchiladas are heated through, the cheese is gloriously melted and bubbly, and the edges of the tortillas are slightly crispy. Carefully transfer the baking dish from the oven to a wire baking rack.
  5. Serve and Enjoy! Allow the enchiladas to cool for a few minutes before serving. This helps the cheese set slightly and prevents burns. Serve them immediately while they are wonderfully hot and melty, garnished with an abundance of your favorite fresh toppings. Indulge in every delicious bite!
