Roasted Tomato Bacon Soup

It’s tomato soup, but elevated with a smoky twist that you won’t be able to resist!

- 2 lbs. Roma tomatoes, or other firm, ripe tomatoes, halved lengthwise (choose vibrant red ones for best flavor and color)
- 1–2 Tbsp. vegetable or canola oil (for roasting the tomatoes)
- 1/2 tsp sea salt and 1/4 tsp freshly ground black pepper (for seasoning tomatoes)
- 6 strips thick-cut bacon, chopped into small pieces (for maximum crispiness and flavor)
- 1 small white onion, finely chopped (provides a sweet, aromatic base)
- 4 cloves garlic, minced (essential for depth of flavor)
- 4 cups chicken or vegetable stock (use a good quality stock for richer soup)
- 1 Tbsp. smoked paprika (adds that wonderful smoky warmth)
- 1 bay leaf (for subtle herb notes)
- 2/3 cup heavy cream (for a luxurious, silky finish)
- Fresh basil or chives, chopped (for garnish, optional)
Instructions
- Roast the Tomatoes: Begin by preheating your oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil or parchment paper for easy cleanup. Arrange your halved tomatoes in a single layer on the prepared baking sheet, ensuring they have enough space to roast evenly. Drizzle or lightly mist them with 1-2 tablespoons of vegetable or canola oil. Season generously with sea salt and freshly ground black pepper. Roast for approximately 45-60 minutes, or until the tomatoes are beautifully tender, slightly caramelized, and their skins have begun to wrinkle and burst. This roasting step is key to developing their deep, sweet flavor.
- Crisp the Bacon: While the tomatoes are roasting, heat a large, heavy-bottomed stockpot or Dutch oven over medium-high heat. Add the chopped bacon and cook, stirring occasionally, until it reaches a beautiful golden crispiness, usually about 8-10 minutes. Using a slotted spoon, carefully transfer the crispy bacon to a heat-proof bowl lined with a paper towel to drain excess fat. Set the bacon aside for garnish or to be added to the soup later. Leave about 2 tablespoons of the rendered bacon fat in the stockpot – this precious fat will form the aromatic foundation for your soup.
- Build the Flavor Base: Reduce the heat to medium. Add the finely chopped white onion to the stockpot with the reserved bacon fat. Sauté the onion for about 5-7 minutes, stirring until it becomes soft, translucent, and fragrant. Be careful not to let it brown too much. Next, add the minced garlic and cook for an additional minute until it’s wonderfully aromatic, being careful not to burn it.
- Simmer and Infuse: Pour in the chicken or vegetable stock, ensuring to scrape up any flavorful browned bits from the bottom of the pot. Add the bay leaf and smoked paprika. Carefully add the roasted tomatoes and most of the cooked bacon (reserve a little for garnish if desired) to the pot. Bring the mixture to a gentle boil, then immediately reduce the heat to medium-low. Let it simmer uncovered for 15-20 minutes, allowing the flavors to meld beautifully and the soup to slightly reduce and thicken.
- Puree and Finish: Remove the bay leaf from the soup. If you desire a smooth, creamy soup, use an immersion blender directly in the pot to puree the soup until it reaches your desired consistency. Alternatively, carefully transfer the soup in small batches to a standard blender and puree until smooth. (Always exercise extreme caution when blending hot liquids by filling the blender only halfway, securing the lid, and starting on low speed, covering the lid with a towel to prevent splashes.) Once pureed, return the soup to the stockpot if you used a regular blender. Stir in the heavy cream until thoroughly combined and the soup takes on a luxurious, velvety texture. Taste and adjust seasoning with additional salt and pepper if needed. Remove from heat and serve immediately, garnished with the reserved crispy bacon and fresh herbs like basil or chives.
