As much as I adore the spontaneity of travel, I confess to being a perpetual procrastinator when it comes to trip planning, especially concerning meals. The allure of dining out and discovering new culinary gems in an unfamiliar city is always a highlight of any vacation. I often envision myself meticulously researching recommendations and crafting a detailed itinerary of must-try restaurants. Yet, in reality, I’m usually the person frantically packing a suitcase at 11 PM the night before a flight, which means restaurant scouting often begins, rather unglamorously, about an hour before hunger strikes!

Thankfully, reliable platforms like Yelp rarely disappoint, a fact Barclay and I experienced firsthand during our recent weekend getaway to New York City. Fresh off the plane and with rumbling stomachs but no culinary agenda, we relied on a quick search. While Barclay engaged our Uber driver in what would become a characteristic deep dive into local anecdotes (he has an uncanny knack for connecting with strangers), I browsed Yelp for brunch spots near our hotel. Serendipitously, a charming Aussie beach cafe, just a block away, caught my eye. Its menu was brimming with beautiful, healthy dishes that garnered rave reviews, immediately convincing us where we’d kick off our Saturday morning.

And oh, how Yelp delivered! This delightful cafe quickly became a standout memory of our trip. Stepping inside felt like a breath of fresh, summery air in the midst of a chilly January, with its bright, inviting decor. The friendly servers, with their wonderful Aussie accents, added to the authentic charm. Barclay, being half-Kiwi, particularly appreciated the impeccably made flat whites. But the true star was undoubtedly the food – truly exceptional and a highlight that we’re still talking about. We’re already anticipating our next visit, but until then, I couldn’t resist recreating our favorite dishes at home. My first attempt was this absolutely delicious and nourishing Hummus and Veggie Breakfast Bowl.

It’s easy to see why we fell in love with this place! Everything about it was simply delightful, and the flavors were incredible. Barclay couldn’t stop raving about his mushroom toast for the rest of the day, but I was completely smitten with my “Brassicas Bowl,” which I admittedly enjoyed with a small side of crispy bacon. This bowl was a true celebration of cruciferous vegetables – a medley of fresh kale, tender Brussels sprouts, roasted broccolini, and a hint of mustard. It was generously served with a creamy swipe of hummus, abundant toasted sunflower and sesame seeds, and perfectly soft-boiled eggs, creating a symphony of textures and tastes.

Back in my own kitchen, I set out to recreate that memorable brunch experience. My local grocery store doesn’t consistently stock broccolini, so I opted for fresh asparagus, which turned out to be a fantastic substitute. The beauty of this recipe lies in its versatility; feel free to incorporate any sautéed or roasted vegetables you have on hand or prefer. Imagine sweet potatoes, bell peppers, or even broccoli florets adding their unique touch to the bowl!

Description

This nourishing Hummus and Veggies Breakfast Bowl is filled with feel-good, flavorful favorites that combine to make a perfectly savory and delicious meal!


Ingredients

Breakfast Bowls Ingredients:

  • 1 tablespoon avocado oil or olive oil
  • 1 pound asparagus¹, cut into bite-sized pieces (with ends trimmed and discarded)
  • 3 cups shredded kale leaves
  • 1 batch lemony dressing (see recipe below)
  • 3 cups shredded (uncooked) Brussels sprouts²
  • 1 ½ cups cooked quinoa³
  • ½ cup hummus
  • 1 avocado, peeled, pitted and thinly-sliced
  • 4 eggs, cooked however you’d like (I soft-boiled mine)
  • Garnishes: sunflower seeds (or sliced almonds), toasted sesame seeds, crushed red pepper

Lemony Dressing Ingredients:

  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons freshly-squeezed lemon juice
  • 2 teaspoons Dijon mustard
  • 1 garlic clove, minced
  • Salt and freshly-cracked black pepper

Instructions

To Make The Breakfast Bowls:

  1. Heat oil in a large saute pan over medium-high heat. Add asparagus and saute for 4-5 minutes, stirring occasionally, until tender. Remove from heat and set aside.
  2. Meanwhile, in a large mixing bowl, combine the kale and lemony dressing. Then use your fingers to massage the dressing into the kale for 2-3 minutes, or until the leaves are dark and softened. Add the Brussels sprouts, quinoa, and cooked asparagus, and toss until combined.
  3. To assemble the bowls, smear a spoonful of hummus along the side of each bowl. Then portion the kale salad evenly between the four bowls, top with avocado, egg, and your desired garnishes. Serve immediately.

To Make The Lemon Vinaigrette:

  1. Whisk all ingredients together in a small mixing bowl until combined.

Notes

¹ Feel free to use your favorite vegetable(s) here in place of asparagus, sautéing or roasting them until cooked.

² To shred your Brussels sprouts, either thinly-slice them with a knife by hand. Or — my favorite — let the disc slicer on a food processor do all of the work for you.

³ To yield about 1.5 cups cooked quinoa, you will need about 1/2 cup uncooked quinoa and 1 cup chicken (or vegetable) stock. Here is my tutorial for how to cook quinoa.
