One of the unexpected, yet thoroughly cherished, perks of returning to a shared workplace a few days a week is having a ready and enthusiastic group of taste-testers for my latest baking endeavors. No longer confined to asking my long-suffering family for their third opinion on a recipe, I now have a diverse panel of colleagues eager to offer their honest feedback. It’s a fantastic way to gauge how a new recipe performs in the real world, and I absolutely love it!

Yesterday morning, after perhaps (or perhaps not!) indulging in one of these heavenly Chocolate Biscoff Whoopie Pies for my own breakfast, I decided to bring the rest of the batch into the office to share.   • 2/3 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup (8 Tbsp.) unsalted butter, softened to room temperature
  • 1 cup packed dark brown sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 cup milk (whole or 2% works best)

For the Biscoff Cream Cheese Frosting:

  • 1 (8 oz.) block cream cheese, softened
  • 1/2 cup Biscoff spread (also known as Speculoos cookie butter)
  • 1/2 tsp. pure vanilla extract
  • 1 cup powdered sugar (confectioners’ sugar), sifted

Instructions

To Make The Chocolate Whoopie Pies:

  1. Preheat your oven to 375 degrees F (190 degrees C). Prepare several baking sheets by lining them with parchment paper or a silicone baking mat (like a Silpat). This will prevent sticking and ensure even baking.
  2. In a medium bowl, carefully sift together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Sifting helps to remove lumps and aerate the dry ingredients, resulting in a lighter whoopie pie. Set aside. In a separate large bowl, using an electric mixer, beat the softened unsalted butter and packed dark brown sugar on low speed until they are just combined. Increase the speed to medium and continue beating for about 2 minutes until the mixture is light and fluffy. Add the egg and vanilla extract, beating for another two minutes until well incorporated. Bake for approximately 10 minutes, or until the whoopie pies spring back gently when lightly pressed in the center. The edges should be set, but the centers should still be soft and cakey. Repeat with the remaining frosting and cookies.

To Make The Biscoff Cream Cheese Frosting:

  1. In a clean mixing bowl, use an electric mixer to cream together the softened cream cheese and Biscoff spread on medium speed until the mixture is smooth and well combined. This usually takes about 1-2 minutes. Add the vanilla extract and gradually add the sifted powdered sugar on low speed, mixing until the sugar is fully incorporated and the frosting starts to come together. Stop the mixer, and use a spatula to scrape down the sides and bottom of the bowl, ensuring all ingredients are evenly mixed. Increase the speed to medium and mix for one more minute until the frosting is light, fluffy, and perfectly smooth. This frosting is now ready to be generously piped or spread onto your cooled chocolate whoopie pies.

Notes

If Biscoff spread isn’t readily available or you’re looking for a different flavor profile, these whoopie pies are equally delicious with a smooth peanut butter cream cheese frosting or even a hazelnut spread (like Nutella) variation. Feel free to experiment with your favorite creamy spreads! To ensure the best texture, always use room temperature butter and cream cheese for both the cookies and the frosting, as this helps achieve a smooth, consistent mixture. For easy frosting, a piping bag with a round tip can create beautifully uniform whoopie pies, or simply use an offset spatula for a rustic charm. Store any leftover whoopie pies in an airtight container at room temperature for up to 2-3 days, or in the refrigerator for up to a week. For longer storage, they can also be frozen for up to a month, then thawed at room temperature before serving.
