However, our book club isn’t just about literature; it’s equally renowned for its gourmet spreads of food and wine. Each month, hosts dedicate as much passion and preparation to the culinary delights as they do to the literary selections. So, you can imagine the collective excitement that rippled through the room when news broke that Amy had brought a homemade cheesecake to share. Or, as Amy casually put it, she had “just whipped up” a cheesecake. Ingredients

For the Cheesecake Crust:

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • pinch of salt
  • 1/4 cup granulated sugar (from the total 1 1/2 cups)

For the Lavender Cheesecake Filling:

  • 4 (8-ounce) bricks Neufchatel (low-fat) cream cheese, softened
  • 1 1/4 cups granulated sugar (remaining from total)
  • 1 cup Greek yogurt
  • 1 Tbsp vanilla extract
  • 1 Tbsp fresh lavender buds, finely chopped (measure first, then chop the buds)
  • 1 Tbsp Earl Grey tea leaves (optional, but highly recommended for the full experience)
  • 4 large eggs

For the Earl Grey Whipped Cream Topping:

  • 2 cups heavy cream
  • 1 Earl Grey tea bag (optional, for infusing the cream)

Instructions

To Prepare the Lavender Earl Grey Cheesecake:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan. In a medium bowl, whisk together the graham cracker crumbs, melted unsalted butter, pinch of salt, and 1/4 cup of the granulated sugar until thoroughly combined and moistened. Press this mixture firmly onto the bottom of the prepared springform pan. You can also press it slightly up the sides of the pan if you prefer. Bake the crust for 10 minutes, then remove it from the oven and allow it to cool completely. Once cooled, reduce the oven temperature to 325°F (160°C).
  2. While the crust cools, prepare your springform pan for a water bath. Once the pan reaches room temperature, carefully wrap the entire outside of the springform pan with two layers of heavy-duty aluminum foil, ensuring there are absolutely no gaps or seams where water could seep through. This creates a protective barrier for the cheesecake. Place the foil-wrapped springform pan into a large roasting dish or any oven-safe pan that is larger than the springform. Begin to boil a tea kettle or a pot of water in preparation for the water bath. Set this aside.
  3. Using an electric mixer (stand mixer with paddle attachment or a hand mixer), beat the softened Neufchatel cream cheese on medium speed for about 3 minutes until it is perfectly smooth and creamy, with no lumps. Add the remaining 1 1/4 cups of granulated sugar and continue to beat for an additional minute until the sugar is well blended into the cream cheese mixture. Scrape down the sides and bottom of the bowl with a spatula to ensure everything is incorporated. Add the Greek yogurt, vanilla extract, and the finely chopped fresh lavender buds. If you are opting for the Earl Grey flavor in the filling, add the 1 tablespoon of Earl Grey tea leaves now. Beat for another minute, stopping halfway through to scrape the bowl once more. Finally, add the eggs, one at a time, beating on low speed only until each egg is just blended into the mixture. It is crucial not to overbeat the eggs, as this can incorporate too much air, leading to cracks in your baked cheesecake. Pour the smooth filling evenly over the cooled crust in the prepared springform pan.
  4. Carefully place the double-pan setup (springform inside the larger roasting pan) into the preheated 325°F (160°C) oven, ideally on a shelf in the bottom third of the oven. Now, very carefully pour the boiling water from your tea kettle or large measuring cup into the larger roasting pan, surrounding the springform pan. The water should come up about 1-inch high around the springform. This water bath creates a moist, even cooking environment, which is key to preventing cracks and achieving a silky-smooth texture in your cheesecake.
  5. Close the oven door and bake the cheesecake for approximately 1 hour and 40 minutes, or until the edges are set, but the center still jiggles ever so slightly when gently nudged. This slight jiggle indicates perfect doneness. Turn off the oven, but leave the cheesecake inside with the oven door propped open slightly (a wooden spoon works well) for 1 hour. This gradual cooling prevents cracking. After 1 hour, remove the cheesecake from the oven and the water bath. Carefully run a thin knife around the edges of the cake to loosen it from the pan. Let the cheesecake cool completely to room temperature on a wire rack. Once at room temperature, transfer it to the refrigerator to chill for at least 4 hours, or ideally, overnight. Chilling is essential for the cheesecake to fully set and for the flavors to meld beautifully. After 4 minutes, remove and discard the tea bag. Transfer the infused cream to a bowl, cover it, and refrigerate it until it is thoroughly chilled. Once cold, follow these simple instructions for how to make homemade whipped cream: using a stand mixer with a whisk attachment or a hand mixer, beat the chilled Earl Grey infused heavy cream on medium-high speed until soft peaks form, then increase speed until stiff peaks are achieved. Be careful not to overbeat, or it will turn granular.
