  • 1 (15-ounce) can chickpeas, thoroughly drained and rinsed.
  • 1 English cucumber, thinly sliced into half-moons.
  • 2 cups cherry or grape tomatoes, halved. A mix of colorful heirloom varieties adds visual appeal.
  • Half a small red onion, peeled and very thinly sliced, separated into rings.
  • 1/3 cup shaved or freshly shredded Parmesan cheese, with extra reserved for garnishing.
  • 1/4 cup fresh basil leaves, thinly sliced or roughly chopped.
  • 1 batch of Easy Italian Vinaigrette (recipe follows below).

Easy Italian Vinaigrette Ingredients:

  • 1/4 cup high-quality extra-virgin olive oil.
  • 2 tablespoons red wine vinegar, for a bright and tangy kick.
  • 1 clove garlic, pressed or very finely minced for maximum flavor.
  • 1/2 teaspoon Dijon mustard (optional, but adds a lovely emulsifying touch and subtle tang).
  • 1/2 teaspoon dried oregano, or 1 teaspoon fresh oregano, finely chopped.
  • 1/4 teaspoon Kosher salt, or to taste.
  • Freshly ground black pepper, to taste.


Instructions

To Make The Panzanella:

  1. Preheat your oven to 350°F (175°C). This temperature ensures the bread toasts evenly to a beautiful golden crisp.
  2. Place the cubed bread onto a large baking sheet in a single layer. Drizzle evenly with the melted butter, tossing gently to ensure all bread cubes are lightly coated. Bake for 10-15 minutes, or until the bread is golden brown and delightfully crispy. Keep a close eye on it to prevent burning.
  3. While the bread is toasting, use this time efficiently to prepare all your other fresh ingredients. Wash and chop the vegetables, drain and rinse the chickpeas, and prepare the Easy Italian Vinaigrette (instructions below).

Add the drained chickpeas, sliced cucumber, halved cherry tomatoes, thinly sliced red onion, shaved Parmesan, and fresh basil leaves. Drizzle the prepared Italian vinaigrette evenly over all the ingredients. Gently toss to combine everything thoroughly, ensuring the bread and vegetables are well-coated with the dressing.
  5. Serve immediately for the crispiest bread and freshest flavor, garnished with extra Parmesan cheese if desired. Alternatively, for a more marinated flavor where the dressing soaks into the bread, cover the bowl and refrigerate for up to 4 hours. Stir once before serving to redistribute the flavors. To Make The Vinaigrette:

  1. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, minced garlic, Dijon mustard (if using), dried oregano, Kosher salt, and black pepper until all ingredients are well combined and the vinaigrette is emulsified. Taste and adjust seasonings as needed, adding more salt or pepper to your preference.
