  • 1 unbaked double pie crust recipe (enough for a top and bottom crust)
  • 5 cups sweet cherries, pitted
  • 1/2 cup granulated sugar
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. fresh lemon zest
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1/4 cup corn starch
  • 1 Tbsp of unsalted butter, cut into tiny pieces
  • 1 Tbsp. milk
  • Granulated sugar for sprinkling (turbinado sugar recommended for extra crunch)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the pitted cherries, sugar, lemon juice, lemon zest, almond extract, vanilla extract, and cornstarch. Toss gently until all the cherries are evenly coated.
  3. Roll out one half of your pie dough and carefully lay it into a 9-inch pie pan. Ensure it’s snugly fitted without stretching.   4. Roll out the second half of your pie dough. You can either lay it directly on top of the filling, making a full double pie crust (remember to cut a few slits in the middle to allow steam to escape), or cut it into strips to create an elegant lattice pie crust. Seal the edges of the top and bottom crusts together, trimming any excess.
  5. For a golden finish, brush the top pie crust with milk and sprinkle generously with granulated sugar (turbinado sugar adds a lovely sparkle and crunch), if desired. Then, refrigerate the assembled pie for at least 30 minutes, or place it in the freezer for 10 minutes, before baking. This step helps the crust hold its shape and prevents shrinking.
  6. Place the pie on the middle rack of your preheated oven. To catch any potential drippings and keep your oven clean, place a baking sheet or a piece of aluminum foil on the rack directly below the pie. Bake for 15 minutes at 425°F (220°C). After 15 minutes, reduce the oven temperature to 350°F (175°C) and continue to bake for an additional 35-45 minutes, or until the pie crust is beautifully golden brown and the cherry filling is visibly thick and bubbly. If the crust begins to brown too quickly, you can loosely cover the edges with aluminum foil.
