These Pizza Spaghetti Squash Boats are incredibly easy to make, offer endless customization options with your favorite pizza toppings, and are absolutely delicious! They are also naturally gluten-free, provided you choose gluten-free pizza toppings, making them a fantastic healthy alternative to traditional pizza.
Ingredients
- 2 small spaghetti squash
- Olive oil
- Salt and pepper, to taste
- 2 cups pizza sauce
- 2 cups shredded mozzarella cheese
- Your favorite pizza toppings (e.g., pepperoni, diced green peppers, thinly-sliced red onions, crushed red pepper flakes, mushrooms, olives, pre-cooked sausage, spinach, etc.)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup, then lightly mist it with cooking spray. Set aside.
- Very carefully, using a sharp knife, cut each spaghetti squash in half lengthwise. For easier cutting, you can microwave the squash for 2-3 minutes first to slightly soften the skin. Use a spoon to scoop out and discard the seeds and stringy pulp from the center of each squash half.
- Brush the cut flesh of the squash halves evenly with olive oil, then sprinkle generously with salt and pepper. Place the squash halves cut-side-down on the prepared baking sheet.
- Bake for 30-35 minutes, or until the inside of the squash is cooked through and the flesh shreds easily with a fork. Larger squash halves may require a longer baking time. Remove from the oven and allow the squash to cool for a few minutes until it’s comfortable to handle.
- Using a fork, gently shred the cooked inside of each squash half until all the flesh resembles spaghetti strands. Then, add approximately 1/2 cup (or more, to taste) of pizza sauce and about 1/4 cup of shredded mozzarella cheese to each squash half. Gently toss and stir the mixture until all the spaghetti-ed squash strands are evenly coated with the sauce and cheese.
- Evenly distribute a few of your chosen pizza toppings over the saucy squash in each boat. Follow with an additional sprinkle of about 1/4 cup of mozzarella cheese, and then add a few more pizza toppings on top, as desired, for a colorful and flavorful finish.
- Turn your oven to the broiler setting. Carefully place the baking sheet with the spaghetti squash pizzas back into the oven. Position the baking sheet on a rack about one-third of the way from the top of the oven. Broil for 4-6 minutes, keeping a very close and constant eye on the pizzas to prevent burning. The pizzas are ready when the cheese is fully melted, bubbly, and starts to turn a beautiful golden-brown color.
- Remove the pizza boats from the oven immediately and serve hot. Enjoy your healthy, delicious, and customizable spaghetti squash pizza!
