The efficiency of a text message or the detailed nature of an email has far surpassed the utility of a voicemail in my day-to-day.

Conversely, instant messaging platforms have soared to the top of my preferred communication methods. Whether it’s the ease of iMessaging from my computer – saving my thumbs from the strenuous task of phone typing – or the collaborative environment of G-Chat, these tools have become indispensable. Working from home, these digital chats often serve as my virtual office water cooler. I connect with a diverse group of people daily; some are close friends, while many are fellow bloggers who double as my virtual co-workers. We share insights, bounce recipe ideas off each other, and simply chat about life, making the sometimes-solitary work of blogging feel much more connected.

One such virtual colleague and dear friend is Maria from Two Peas and Their Pod. Our daily conversations usually cover everything from personal anecdotes to shared pop culture interests. Stuffed Shells Ingredients:

  • 1/4 cup Panko breadcrumbs
  • 1 Tablespoon butter, melted
  • 1 teaspoon Italian seasoning, homemade or store-bought
  • 1/4 teaspoon salt
  • 6 ounces jumbo shells
  • 6 cloves garlic, peeled
  • 1 medium butternut squash, peeled, seeded and diced into 1/2-inch cubes (see my tutorial here)
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 batch Skinny (Sage) Alfredo Sauce, recipe below
  • (optional: 1 cup shredded part-skim Mozzarella cheese)

Skinny (Sage) Alfredo Sauce Ingredients:

  • 1 Tbsp. olive oil
  • 4 cloves garlic, pressed or minced
  • 3 Tbsp. all-purpose flour
  • 1 cup chicken or vegetable stock
  • 1 cup low-fat milk (I used 1%)
  • 1 Tablespoon chopped fresh sage (or 1 teaspoon dried sage)
  • 3/4 cup freshly-grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

To Make The Stuffed Shells:

  1. Preheat oven to 425 degrees F (220°C).  Line a large baking sheet with parchment paper or aluminum foil (greased with cooking spray).
  2. In a small bowl, combine the Panko breadcrumbs, melted butter, Italian seasoning, and 1/4 teaspoon salt. Stir until the breadcrumbs are evenly coated. Set this mixture aside for later.
  3. In a large mixing bowl, toss together the diced butternut squash, peeled garlic cloves, and olive oil until all pieces are evenly coated. Spread the seasoned butternut squash evenly onto the prepared baking sheet. Season generously with a few pinches of salt and black pepper. Remove the garlic cloves and place them in a small pouch made of aluminum foil; seal it tightly and place it on the baking sheet alongside the squash. Bake for approximately 20 minutes, or until the butternut squash is tender enough to mash easily with a fork and the garlic is soft, fragrant, and lightly caramelized. Transfer the roasted squash and garlic back to the large mixing bowl. Add 1 cup of the prepared alfredo sauce (recipe below), and mash everything together with a fork until relatively smooth and well combined.
  4. While the butternut squash is roasting, bring a large stockpot of generously-salted water to a rolling boil over high heat. (Chef’s Tip: You can begin preparing the alfredo sauce simultaneously at this point to save time.) Add the jumbo pasta shells to the boiling water and cook until al dente, or ideally, just about one minute shy of al dente, according to package instructions. This ensures they are firm enough to stuff without tearing. Drain the shells thoroughly.
  5. In a 9×13-inch baking dish (or a similar oval-shaped dish), spread out 1/2 cup of the remaining alfredo sauce in an even layer across the bottom. Carefully stuff each cooked jumbo shell with a tablespoon or two of the butternut squash filling. Arrange the stuffed shells in an even layer in the baking dish, filling-side-up. Spoon the remaining alfredo sauce evenly over the tops of the stuffed shells. (Optional: If you’re using mozzarella cheese, sprinkle 1 cup of shredded part-skim Mozzarella evenly over the alfredo sauce at this stage for extra gooeyness.) Finally, sprinkle the prepared Panko breadcrumb mixture evenly over everything.
  6. Bake the shells uncovered for 15 minutes, or until the Panko topping is beautifully crispy and lightly golden brown. Remove from the oven and serve immediately while hot and bubbly.

To Make The Skinny (Sage) Alfredo Sauce:

  1. Heat 1 tablespoon of olive oil in a large sauté pan over medium-high heat. Add the minced or pressed garlic and sauté for about one minute, stirring occasionally, until it becomes fragrant. Sprinkle the 3 tablespoons of flour over the garlic and stir well to combine, forming a roux. Continue to sauté for an additional minute, stirring occasionally, to cook out the raw flour taste.
  2. Slowly pour in the 1 cup of chicken or vegetable stock, whisking continuously to ensure a smooth mixture without lumps. Whisk in the 1 cup of low-fat milk and the fresh or dried sage. Bring the mixture to a gentle simmer, then let it cook for an additional minute, whisking, until the sauce begins to thicken. Stir in the 3/4 cup of freshly-grated Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the cheese has fully melted and the sauce is smooth and creamy. Reduce the heat to low and keep warm until you are ready to use it.
  3. (*For optimal timing, I recommend preparing the alfredo sauce simultaneously while you bring the pasta water to a boil and cook the pasta shells. This ensures everything is ready at around the same time for assembly.)
