Just a few nights ago, I had the pleasure of hosting an event that has truly become one of my most cherished annual traditions: Neighborsgiving! Just the week before Neighborsgiving, I received a wonderful surprise: a box of fresh, crisp apples delivered right to my door from Harry & David. I had to quickly retrieve them from our building’s mailroom before our very enthusiastic building manager decided they were fair game! I often joke that I win the award for the most temptingly delicious mail in our entire building. As soon as I saw those beautiful apples, I knew their destiny was to become something truly special.

It was unequivocally “crisp time!”

While I often enjoy improvising with fruit crisps, adding “a little of this and a little of that,” for this special occasion, I decided to adapt a tried-and-true recipe: my Easy Blueberry Crisp. This recipe is fantastic because it’s naturally gluten-free and inherently delicious. It also boasts the versatility of being easily made vegan. However, for Neighborsgiving, I opted for melted butter instead of coconut oil, adding a touch of traditional richness that felt just right for the festive gathering. This slight indulgence made it a true treat for my friends and neighbors.

Making this apple crisp was genuinely straightforward. The first step involved preparing the apples. I simply chopped a generous amount of apples, keeping the skin on for added color, texture, and nutritional value – I find the flecks of red skin quite appealing in the final dish. Of course, if you prefer a smoother texture, you can certainly peel them. Once chopped, I gently tossed the apple pieces with a generous amount of ground cinnamon and a splash of fresh lemon juice. The lemon juice is key here; it not only prevents the apples from browning but also brightens their natural sweetness and adds a subtle tang that balances the spices.

After assembling the crisp, I baked it until the topping achieved a magnificent golden-brown crispness and the apples below were wonderfully soft and tender, bubbling with their sweet juices. The aroma filling my kitchen was simply divine, a true harbinger of fall.

This Easy Apple Crisp recipe is made with simple, wholesome ingredients. It’s naturally gluten-free and can be easily adapted to be vegan, making it a delicious and versatile dessert for any occasion, especially during the fall season.

  • 1 cup old-fashioned oats (use certified gluten-free oats if making this recipe GF)
  • 1/2 cup almond meal*
  • 1/2 cup chopped pecans or walnuts
  • 1 1/2 teaspoons ground cinnamon, divided
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup
  • 1/4 cup melted butter (or coconut oil, if making this recipe vegan)
  • 4 apples, cored and diced (about 56 cups)
  • 2 teaspoons freshly-squeezed lemon juice

Instructions

  1. Preheat oven to 350 degrees F (175°C).
  2. In a mixing bowl, combine the oats, almond meal, chopped nuts, 1/2 teaspoon of cinnamon, and salt. Toss thoroughly until all ingredients are well combined. Add the maple syrup and melted butter (or coconut oil), then toss again until the dry ingredients are evenly moistened. Set this topping mixture aside.
  3. In a separate large bowl, combine the diced apples, lemon juice, and the remaining 1 teaspoon of cinnamon. Toss until the apples are evenly coated. Spread the apple mixture evenly into a greased 8×8-inch or 9×9-inch baking pan. Then, sprinkle the prepared oat-nut topping evenly over the apples.
  4. Bake for 35-40 minutes, or until the topping is beautifully crisp and golden brown, and the apples underneath are tender and cooked through. Serve immediately for the best experience. (I personally love serving mine with a scoop of vanilla ice cream and a drizzle of caramel sauce.)
  5. If you have leftovers, allow the apple crisp to cool completely to room temperature. Once cooled, cover tightly and refrigerate for up to 3 days. Reheat gently in the oven for best results.

Notes

*If almond meal is not readily available at your local store, you can easily make your own by pulsing blanched almonds in a food processor until a fine, flour-like consistency is achieved. Alternatively, you can substitute white whole wheat flour or all-purpose flour in place of the almond meal, though this will change the gluten-free nature of the topping.
