There’s something truly magical about summer. As the temperatures soar and the days stretch longer, my spirit seems to ignite with a renewed sense of joy and vitality. While some might shy away from the intense summer heat, I embrace it wholeheartedly. Give me a sun-drenched day with flip-flops and iced beverages over a frosty winter morning any time. It’s not just about soaking up those precious extra hours of sunshine – which, as my husband Barclay likes to quip, recharges my “solar-powered” self with essential Vitamin D – but also about the sheer happiness that comes with this vibrant season. Summer embodies a lifestyle of ease, outdoor gatherings, sundresses, and refreshing dips in the pool.

And speaking of refreshing, know what else sparks immense happiness in my kitchen? Light, fresh, and irresistibly delicious meals that don’t demand you crank up the oven. The kind of dishes that complement the season’s carefree vibe, making healthy eating a true pleasure. This recipe, my friends, is precisely that.

Embrace the Freshness: The Joy of Lettuce Wraps

My love affair with lettuce wraps dates back to my high school days, when P.F. Chang’s made them a sensation. They truly are a culinary stroke of genius – a brilliant alternative to traditional buns, tortillas, or a heavy bed of rice. By swapping out the carb-heavy bases for crisp, fresh lettuce cups, you instantly transform a meal into a lighter, more vibrant experience without sacrificing an ounce of flavor. They offer that satisfying crunch, a refreshing texture, and let the main ingredients truly shine. Plus, let’s be honest, they always look so artfully arranged and inviting on a plate!

The other night, a craving for orange chicken struck. But instead of defaulting to a rich, fried version with a side of rice, I decided to lean into the lighter side. The vision of tender, flavorful orange chicken nestled in crisp Bibb lettuce cups immediately came to mind, promising a healthier twist on a beloved classic. It’s all about making smart, delicious choices that align with a feel-good lifestyle.

Crafting the Perfect Naturally Sweetened Orange Sauce

The secret to an outstanding orange chicken, especially one that’s light and fresh, lies in its sauce. I’ve perfected a simple yet incredibly flavorful sesame orange sauce that hits all the right notes: sweet, tangy, and savory. What makes it truly special is its natural sweetness, derived from a touch of golden honey and the vibrant zest of Florida’s Natural® Brand Orange Juice. I’m particularly fond of using Florida’s Natural because it stands out as genuinely 100% pure juice, sourced directly from Florida oranges, and contains absolutely no added sugars or artificial ingredients. It’s a win-win: superior taste and wholesome quality.

Creating this delicious sauce is incredibly straightforward. You simply combine all the sauce ingredients in a pan and bring them to a gentle simmer. As the sauce heats, it naturally thickens, transforming into a luscious glaze that will perfectly coat our chicken. The aroma alone is enough to get your taste buds tingling!

Assembling Your Flavorful Fillings

While the orange sauce works its magic on the stovetop, it’s the perfect time to prepare the other components of our lettuce wraps. For the protein, I opted for pre-cooked chicken breasts I had on hand, finely chopped to ensure every bite is packed with flavor. This is a fantastic time-saver, but feel free to use a store-bought rotisserie chicken for ultimate convenience, or even sauté some ground chicken if you prefer. The beauty of this recipe is its flexibility!

Next, we introduce elements that add texture and freshness. Crisp water chestnuts provide a delightful crunch, while a freshly diced navel orange introduces bursts of citrusy sweetness that echo the flavors in our sauce. Thinly sliced green onions contribute a mild, zesty bite and a pop of vibrant green color. Each ingredient is thoughtfully chosen to create a symphony of flavors and textures within each wrap.

Fresh ingredients laid out: chopped chicken, diced orange, water chestnuts, and green onions, ready for the orange chicken lettuce wraps.

Once your sauce has reached that perfect consistency, simply add the prepared chicken, diced orange, water chestnuts, and green onions to the pan. Gently stir to combine everything, allowing the ingredients to warm through and absorb that incredible orange sauce. The colors are magnificent – a medley of orange, green, and white that promises a truly satisfying meal.

Finally, it’s time for the grand finale: serving! Spoon the warm, fragrant orange chicken mixture into crisp Bibb lettuce cups. A scattering of toasted almonds adds another layer of crunch and nutty flavor, while sesame seeds and extra green onions provide a beautiful garnish and a final touch of aroma. Each bite is an explosion of fresh, tangy, and savory goodness – seriously, it’s that good!

Why These Orange Chicken Lettuce Wraps Are a Summer Essential

Unlike the heavy, often fried and overly sweet versions of orange chicken you might find, this recipe offers a refreshingly light and wholesome alternative. By serving it in crisp lettuce cups and harnessing the natural sweetness of honey and real Florida’s Natural® Brand Orange Juice, we achieve a vibrant flavor profile that feels invigorating rather than indulgent. It’s a meal that satisfies your cravings for classic Asian-inspired flavors without the guilt, making it perfect for warm weather dining or any time you’re seeking a lighter, yet utterly delicious, option.

This dish is incredibly versatile, fitting seamlessly into various dietary preferences. It’s naturally gluten-free if you use tamari instead of soy sauce, and it’s a fantastic low-carb meal. The fresh ingredients burst with nutrients, making it a wholesome choice for the whole family. Plus, the quick prep and cook time mean you can have a gourmet-tasting meal on the table in under 30 minutes, freeing up more time to enjoy those precious summer evenings.

Tips for Success & Creative Variations

  • Protein Power: While cooked chicken breast is fantastic, don’t hesitate to experiment! Ground chicken, turkey, or even lean ground pork would work wonderfully. For a vegetarian option, consider sautéed extra-firm tofu or tempeh, diced small.
  • Veggie Boost: Enhance the nutritional value and crunch by adding other finely diced vegetables to the mix. Shredded carrots, bell peppers (red or yellow for color!), or even a handful of finely chopped broccoli florets would be delicious additions.
  • Spice It Up: If you love a little heat, increase the amount of sriracha in the sauce, or add a pinch of red pepper flakes when sautéing the chicken mixture.
  • Serving Suggestions: While lettuce cups are the star, these wraps are also excellent served alongside a light cucumber salad, a side of cauliflower rice for a low-carb meal, or a small portion of brown rice if you prefer a more traditional pairing.
  • Make Ahead: The orange sauce can be prepared a day in advance and stored in the refrigerator. Cooked and chopped chicken can also be prepped. When it’s mealtime, simply combine and warm everything up for an even faster dinner.

These Orange Chicken Lettuce Wraps are quick and easy to make, naturally sweetened with honey and orange juice, and incredibly fresh and delicious! Perfect for a light, healthy meal any time of year.

Ingredients

Orange Sauce Ingredients:

  • 2/3 cup not-from-concentrate Florida’s Natural®Brand Orange Juice (any variety, “Some Pulp” works great)
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon garlic powder
  • (optional: 1-2 teaspoons sriracha, to taste)

Orange Chicken Lettuce Wraps Ingredients:

  • 1 batch orange sauce (prepared as above)
  • 1 pound boneless, skinless chicken breasts*, cooked and finely-chopped (about 2.5 cups cooked)
  • 1 large navel orange, peeled and diced
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1/4 cup thinly-sliced green onions
  • 8-10 Bibb lettuce leaves
  • Toppings: slivered or chopped toasted almonds, toasted sesame seeds, (extra) thinly-sliced green onions

Instructions

To Make The Orange Sauce:

  1. Whisk all orange sauce ingredients together in a large sauté pan until thoroughly combined. Add sriracha to taste if desired.
  2. Place the sauté pan over medium-high heat. Bring the sauce to a gentle simmer, stirring occasionally. Allow it to simmer for about 1 minute, or until the sauce noticeably thickens to a desired glaze consistency. Remove from heat briefly.

To Make The Orange Chicken Lettuce Cups:

  1. Ensure the orange sauce is prepared as directed above and ready for use.
  2. Add the chopped chicken, diced orange, drained and chopped water chestnuts, and thinly-sliced green onions into the pan with the prepared sauce. Stir everything thoroughly until all ingredients are well coated.
  3. Continue cooking over medium-high heat for 1-2 minutes, stirring gently, just until all the ingredients are warmed through and the flavors meld together.
  4. Remove the mixture from the heat. Spoon generous portions of the orange chicken filling into individual Bibb lettuce cups.
  5. Garnish immediately with your choice of toppings: slivered toasted almonds, toasted sesame seeds, and additional thinly-sliced green onions. Serve hot and enjoy!

Notes

*For convenience, you can use ground chicken or even finely chopped rotisserie chicken instead of cooking chicken breasts from scratch.
